Sago Plum Pudding

2 cup fresh breadcrumbs

100gm butter

2 cup milk

120gm sago

1½ cup brown sugar

2 cup sultanas

1 tablespoon lemon peel

¼ teaspoon nutmeg

2 teaspoon bicarbonate soda

1 teaspoon water

2 small egg.

 

Combine sago and milk and leave to sit overnight. Heat and bring to boil with butter. Turn to low setting and continue to stir until cooked and translucent (about 15 min).

Mix soda with water add to mixture along with the rest of the ingredients. Beat the eggs and stir in lightly. Pour into greased mould and steam for about 2.5 to 3 hours.
